Our Conquistador 1513 is a 100% Oat mash bill using half smoked and half rolled Oats from farmers in Northern Florida and aged with barrels and chips ot create a smokey oatmeal finish.

Starting with the matured corn spirit, we continue to condition using barrels and heavily smoked oak chips in drums until we achieve a dep resset appearance with substantially dense smoke tones and a soft sweet finish.
Starting with Yellow Maize Corn we get from Florida Farmers, we use half
smoked and half raw kernels to create the mash, double distill, condition and mature at high proof in
drums to form the base corn spirit.
Our Silver Queen Whiskey is made with Silver Queen Sweet White Corn that we grow
ourselves on our farm adjacent to our distillery in Ocala, FL. We use the whole stalk, leaves, ears, kernels
and cobs to create the mash and retain the sweetness. This is whole plant based spirit with an annual production of only 1,000 bottles.
Starting with the matured base corn spirit, we continue to condition using barrels
and smoked oak chips in drums until we achieve a blonde appearance with an immense sweet flavor
and a hint of smoke.
Chamosiee Carnelian
Starting with the matured corn spirit, we continue to condition using barrels
and add additional smoked oak chips in drums until we achieve a light amber appearance with the right
balance of smoke and sweetness.
Ecru Enstatite
Starting with the matured corn spirit, we continue to condition using barrels and even more smoked oak chips in drums until we achieve a dense copper appearance with heavy smoke tones and an underlying sweet finish.
Whiskey Infusions
Using Chamoisee Carnelian as the base spirit, we infuse each of our six infusions with three natural ingredients for weeks, decanter the solids, filter and hand bottle. Each infusion has a triple flavor profile delivered in sequential fashion that truly can be served in glass by itself.
